The grapes were handpicked, crushed, pressed and the juice was cold settled before a very slow wild yeast fermentation in french barriques. The wine was aged in barriques (25% new) for 10 months on lees.
"Brilliant, light lemon-gold colour, a little paler on the edge. The nose is full and well-packed with aromas of ripe citrus and yellow stonefruits and nuances of tropical fruits entwined with complexing reductive, flinty lees elements, creamy barrel-ferment and nutty oak.
Full-bodied, powerful and weighty, the flavours of ripe yellow stonefruits, citrus fruits and tropical fruits are entwined with flinty lees and nutty oak layers. The mouthfeel is fulsome and warm with creamy barrel-ferment textures and alcoholic power, along with discreet acidity. This has good fruit sweetness which is balanced by soft, grainy phenolics that carry the wine to an open and broad finish of citrus fruits, nuts and toasty oak. This is a full, powerful, stonefruited Chardonnay with nutty notes and a warm, generous palate with some alcoholic drive.
Match with roast pork over the next 4+ years."
