Made in a dry style, this wine has complex baked pear aromas with hints of fresh ginger with a subtle mineral note. On the palate this wine shows pears, lemon, a hint of spice, a dash of chalky minerality and moderate finish.
The grapes were handpicked, crushed, given 3 hours on skins, pressed and the juice was cold settled before a slow fermentation in seasoned French barriques using wild yeast for 61% and innoculated stainless tank fermentation for the balance. Aged 11 months on lees.
